Parsley

(Petroselinum crispum)

  This is probably the best-known and most widely used herb. It is a biennial plant but is usually grown as an annual. It grows to about 1ft (30cm). There are a few varieties; most of which have curly leaves but some varieties have flat leaves. These are usually a bit stronger flavour. It requires a well-drained soil in a sunny position. It is difficult to propagate from seed, as they are very slow to germinate. Soaking the seed for 24 hours in tepid water can speed the germination process. Harvesting

Uses

It is used in many culinary dishes.
