Harvesting Tips For Herbs

 

Always gather herbs in the early morning, just after the dew has evaporated and before the sun has had chance to evaporate the essential oils. Pick the herbs when they are dry, any moisture can cause moulds to form. When cutting always use a sharp knife and handle the herbs as little as possible. Excess handling can cause bruising and can be detrimental to the storage and taste. Do not cut more than can be dealt with quickly, any herbs left lying around for any length of time will soon lose their flavour. It is advisable when cutting herbs, to keep them separate from each other to avoid cross flavouring and only to pick undamaged leaves or flowers.
