Fennel

(Foeniculum vulgare)  

A tall perennial that grows to 5ft (1.5m). It has feathery foliage and yellow flowers. It will grow on any soil in shade or full sun. Do not plant near dill. Sow seeds in spring. Cut the plant down to 4" (10cm) above ground level in the autumn.

Harvesting

Pick the leaves as required. Gather flower heads in autumn before they are completely dry and place on paper in a dry airy place to finish ripening the seeds. When completely dry shake out the seeds and store.

Uses

Used in cooking to flavour fish, soups and sauces. Can also be used in salads.
