Dill
(Anethum graveolens)
A feathery
annual that grows to 3ft (1m). It needs a sunny well-drained site.
Avoid growing near to fennel as cross-pollination may occur. Sow seeds
in spring and continue through the summer to give a succession of
crop.
Harvesting
Pick leaves
as required. If drying, pick the leaves just before flowering. If
the seeds are required, allow to dry on the plant and then shake out
into paper bags.
Uses
Both seeds
and leaves are used to flavour a wide variety of dishes, particularly
fish, and used in pickles and sauces.
